I am looking at a sprinkler system that has a foam aspect to cover a high hazard occupancy. The high hazard has since been removed. I would like to remove the foam and leave the sprinker system as it. Is it as simple as removing the connection? What else needs to be done?

The foam system is mixed with water. Depending on the system and how it is set up, you may or may not be able to do so. If you know for sure you are looking at a simple mechanical system then you simply isolate the foam supply.
At the end of the day you had better make sure you aren’t violating any codes. Double check with the fire authority. Often a system like that can not be removed legally without approval,

Any fire suppression system can be removed. It is just a matter of isolating the foam or the CO2 or gas or whatever. If you have gone from a high hazard to something else what are you going to replace it with. Often you have to have the new system in place and opererational before removal of the old system. Call the manufacturer and ask him to come and decommision the system.
